Vegeburgers

Ingredients

125G (4OZ) Baked beans 
125g (4oz) unsalted nuts 
125g (4 oz) carrots, slice 
1 small onion chopped 
15ml (1tblsp) corn oil 
30ml (2 tblsp) tomato chutney 
175g ( 6oz) cooked long grain rice 
45ml (3 tblsp) wholemeal flour 
To garnish

Lettuce, stuffed olives, gherkins, tomato, cucumber, carrot

Methods

  • Place the beans and nuts into a processor and blend well.
  • Fry the carrots and onion in hot oil until golden and soft, add the beans and mix well.
  • Add the tomato chutney and rice. Mix together well. Using a little flour, shape the burghers.
  • Bake in the oven 190c 375f Gas Mark 5 until golden brown.
  • Garnish with curly lettuce for hair, stuffed olives for eyes, gherkins for nose, tomatoes for mouth, cucumber for ruffle and carrot for bowtie.
