Creamy Dolcelatte and Broccoli Gratin

Ingredients

250g (8oz) easy-cook long grain rice 
450g (1lb) Broccoli, trimmed 
30ml (2tblsp) oil 
1 onion cut into wedge shaped slices 
60ml (4 tblsp) flour salt and pepper 
175g (6oz) dolcelatte cheese, grated 
15g (1/2oz) Rice Krispies 
HINT: Firm dolcelatte in freezer for easier grating. 

Method

  • Cook rice as directed. Plunge broccoli into boiling water, cook for 3 minutes, then drain.
  • Heat oil, cook onion until soft, then stir in flor and cook for a minute.
  • Gradually stir in milk and bring to the boil stirring.
  • Remove from the heat, add seasoning, ¾ of the dolcelatte, and the cooked rice.
  • Arrange half the broccoli in the base of an ovenproof dish, spoon over half the rice mixture, then repeat. Mix the Rice Krispies and remaining dolcelatte together, then sprinkle over the top.
  • Bake in oven 190C (375F), Gas Mark 5 for 25 minutes
  • Serves 4
